

Meet Chef Chan
DarSay was born out of memory — of Ms. Dot, Chef Chan's grandmother, who cooked her way from Augusta, Georgia to New York City. Her kitchen was a place of love, laughter, and transformation — where community gathered, culture was celebrated, and every plate told a story. DarSay carries that legacy forward through Soul Con-Fusion™, blending Southern roots with global influences.
Her food has always centered memory, healing, and community and has fed artists, activists, and families across three continents. Her practice grew from her studies in Human Development and early-childhood education, where she learned to connect nourishment with care. Through DarSay, she now brings that legacy abroad, introducing Black Southern flavors to new audiences while collaborating with local Vietnamese farmers, chefs, and creatives.
After a decade of leadership in social impact and healing justice work through global NGO’s like the United Nations Foundation; in addition to food industry mentorship across the U.S. and abroad in South America, the Caribbean, Africa, and beyond, Chef Chan relocated to Vietnam in September 2025 to explore new pathways for creative entrepreneurship and cultural exchange. Vietnam’s rich culinary landscape and vibrant expat community provide the perfect setting for DarSay’s launch and early growth.
